Watermelon Sorbet

The watermelon’s glory days are just about over for the season, but who wouldn’t want to preserve a burst of summery freshness for a rainy day?

Sorbet, the under-rated sister to creamy, ice cream is made from fruit pulp, sugar and water.. And is unbelievably refreshing – summer, winter,  spring – no matter the weather, sorbet comes in handy.

This simple, blended sorbet tastes undeniably festive and is a no-brainer to whip up.

Watermelon Sorbet:

4 cups watermelon, diced & de-seeded
1/2 cup sugar
2 tbsp lemon juice

1. Place ingredients into a blender and process until smooth. Pour through a sieve.
2. Fill a freezer-friendly container and freeze overnight.
3. Scoop out and enjoy.
Tip: For a smoother result, once frozen – reblend and refreeze once more.
